Bend down to work 15 hours a day, insisting the traditional wine style-Champagne Varnier-Fannière.
August or September is the harvesting period of Champagne Varnier-Fannière. The VF team believes that each grape has its own unique personality, therefore they avoid any intervention, and is committed to protecting the old vine grapes and insisting on using traditional juice extraction tools.
After the harvest, the team took turns to bend over the juicer for 8 consecutive days, spending 15 hours a day at the traditional wooden juicer. The traditional wooden machine gently brought out the grape juice, capturing the spirit of the terroir of each small plot. The underground wine cellar is full of champagne maturation, the wine of each plot is stored separately, and the delicate development of the unique unrestrained "stone fruit and roasting aroma, slight chocolate, graphite, truffle and earthy notes"
The vineyards owned by Champagne Varnier-Fannière are located in the white hills of the Champagne region (Avize, Oger, Cramant). The area is 4 hectares, all of which are Grand Cru (the Champagne region has 320 villages and only 17 villages) (Classified as Grand Cru) planting 30,000 Chardonnay to make super premium champagne.
Chardonnay - the grape of Avize
The Avize terroir is very limited: barely 262 hectares of Chardonnay. Avize and Cramant, neighboring villages, original Grands Crus, constitute the historic heart of the Côte des Blancs. Chardonnay began to invest these two villages in the early days of Champagne, especially for its ability to take the foam well.
The whole Coast followed, when the winegrowers of this distant time understood that this terroir was made for this grape variety, so fine and elegant were the wines made from it.
5 km south of Epernay begins the mythical "Côte des Blancs". Five villages classified Grand Cru then follow one another: Chouilly, Cramant, Avize, Oger and Mesnil sur Oger. The basement is entirely made of chalk with belemnites (accumulation of cuttlefish fossils, the Rolls of Champagne chalk) of an impressive depth on the side of the hill (sometimes 10 meters).
In this region, only the white Chardonnay grape is produced, hence the term "Blanc de Blancs" (Champagne made with white grapes) mentioned on the labels of bottles produced in these prestigious villages.
