Ratings and Tasting Notes:WA=93 Bottled after over a decade of maturation on the lees in tank, Defaix's 2007 Chablis 1er Cru Vaillon is drinking brilliantly, offering up aromas of citrus oil, clear honey, oyster shell and beeswax. Medium to full-bodied, suave and satiny, it's a racy, seamless wine with lovely depth, bright acids and a long, sapid finish. More chiseled than its broader, more dramatic 2006 counterpart, Defaix is already out of stock, but this can likely still be found on the market for the time being, and it's well worth a special effort to seek out.
