Grapes from small vineyards in Castiglione Tinella. 4.500 plants per hectare cultivated with Guyot with an average age of 40 years. The soil is clayey limestone.
Vinification: Harvesting of the grapes strictly by hand towards the beginning/middle of September. The vinification begins with a soft pressing of the grapes and natural cold settling. The must remains are stored at a very low temperature in stainless steel tanks to avoid spontaneous fermentation. During the year, individual portions of must are brought into an autoclave at a temperature of 12-14 degrees to start the alcoholic fermentation. Upon reaching approximately 5.5% vol. fermentation is interrupted by rapid cooling of the temperature. The wine, only partially fermented, is thus filtered. Moscato does not undergo malolactic fermentation and is bottled with sterile filtration thus maintaining its natural freshness, aroma and fine bubble.
Description: Bright straw yellow colour with golden reflections, slightly sparkling. Intense aroma of ripe yellow fruit (peaches, apricots) floral notes (rose petals) and ginger. Sweet and delicate on the palate, with modest acidity, good balance and complexity. Fresh apricot finish.
Pairings: Excellent as an aperitif, fruit and creamy desserts, dry pasta, blue cheeses, lobster.
