(WA=91+) Representing a more rigorous selection from steeper, saltier portions of this site than informed the corresponding "two-star" bottling, Molitor's 2009 Brauneberger Klostergarten Pinot Noir Trocken three-star was matured almost entirely in three-year, air-dried and virtually un-toasted oak so that its majority of new wood largely conserves the fruit. Lightly-cooked plum and cherry tinged with black pepper and baking spices are allied on a firm, full palate with deeply roasted red meat flavours. There is a hint of drying tannin in the finish, but a welcome, saliva-inducing salinity helps overcome that. While less texturally refined or aromatically alluringly high-toned than the two corresponding "two-star" bottlings, this almost certainly needed at the time I tasted it to put further distance between itself and recent bottling. I suspect it will be worth holding for a decade.
